This sample 15 day (14 night) itinerary covers Croatia's gastronomic highlights, from the shellfish and wine of Dalmatia to the truffles and meats of the Istrian Peninsula, and the pastries of Zagreb, with a detour to Ljubljana in Slovenia. Zagreb is a city where different worlds have long come together. Situated at the intersection of ancient trade routes between the Adriatic and Central Europe, it is a cosmopolitan place with various cultural influences evident in the cuisine and architecture at home in any Austro-Hungarian city. You’ll love exploring the open-air markets, impressive buildings, peaceful parks, and many delicious restaurants. Just strolling through the unique combination of medieval towers, 19th century palaces, ancient churches, and market squares is a pleasure, but there’s much more to do here. After exploring all that the city has to offer with a local guide, you’ll be able to make the most of your time. You could also take a guided bike tour around the city, to get a little exercise as you experience the city. But you’ll also want to explore some of the region surrounding Zagreb. As a longer day trip, you could see the delightful Trakoscan, a neo-Gothic castle sitting on a hilltop, surrounded by a romantic English style park with exotic trees and an artificial lake. While you’re there you can also stop in Varazdin to appreciate its ornate baroque architecture.

In spite of the rapid economic development of the last few decades, Zagreb has retained its charm, and a relaxed feeling that makes it a genuinely human city. Your guide will pick you up at your accommodation and show you around the local points of interest, including Upper Town, Kaptol, St. Mark’s Church, the Parliament, Zagreb Cathedral, Dolac Market, and the Stone Gate, complete with with funicular ride. At the end of the tour you guide can bring you back to your accommodation, or give you tips for further exploration.

Your driver will meet you at your accommodation on the morning of this fun excursion, and will drive you to the Bizeljsko wine region. Here you'll spend a day with the Istenič family, enjoying a guided wine cellar tour, a tasting of sparkling wine and a delicious homemade lunch or dinner. Along the way you'll also stop at Otočec castle, a Gothic castle of phantasmagoric proportions built in the middle of the shallow running waters of the Krka River. It's the perfect stop for some photos. The duration of the journey is around 7 hours.

Day 4

Day 4 - Your First Full Day in Ljubljana

Explore medieval Ljubljana, from its culture and unusual sites, to its stories and legends. With a local guide you’ll discover its baroque and Secession architecture, along with the works of the architect Joze Plecnik. You’ll walk across the bridges and through the open market and enter the impressive cathedral. Your guide will take you through Old Town, and along the banks of the river Ljubljanica. Learn all about the legend of the city's origin and visit the main attractions. By the end of the tour, you'll understand how Ljubljana, "The Loved One," got its name.

Bled Private Day Trip

This excursion takes you from Ljubljana to picturesque Lake Bled in the foothills of the Slovenian Alps. First, you'll be driven around the lake to get a nice overview of the area. Your first stop will be at Bled Castle where you can try some nice Slovenian wines in a wine cellar or print your own coin in a mint. After the castle, you'll be driven down to the lake to go to the island on a special boat. Visit the stunning church on the island and the pleasant city center of Bled. You can also take an absolutely beautiful hike down the Vintgar Gorge, the light coming through the canyon is amazing and if you go all the way to the bottom you will experience the serene sound of a beautiful waterfall. There is something magical about this part of Slovenia.

Day 5

Day 5 - Traveling to Rovinj by Private Car

A morning start is recommended for your trip to Rovinj as there are some fascinating stops along the way. A private van and driver will pick you up from your accommodation. About halfway to Rovinj, we suggest touring the Postojna caves as well as visiting the nearby Predjama Castle. Built into the side of a cliff, it is a marvel. We will include these stops on your itinerary which means you'll probably arrive in Rovinj in the late afternoon, just in time to check in to your accommodation. The vehicle used for your transfer will be a standard sedan, station wagon or minivan. We can arrange for an upgrade to a more luxurious class of vehicle for an extra fee.

Today you’ll be getting the lay of the land in Rovinj on a 1.5 hour private walking tour. This tour will be led by a local guide who knows all the ins and outs of the place. You’ll see all the main attractions including the St. Euphemia Church, the town clock, and Balbi’s arch. The church is a stunning example of Baroque architecture and dominates Rovinj’s Old Town, as it is built on top of a hill. Inside you’ll see the preserved body of St. Euphemia from the 6th century. This orientational tour will introduce you to the rich history of Rovinj and all of Istria, as well as Italy’s influence on the region.

Today you’ll be creating some classic Croatian seafood dishes in the bustling port city of Pula. The dishes you prepare with an expert chef will be the best selection from Pula’s fish market that day. You'll first learn how to easily clean and fillet fish. Your first course will be fish carpaccio and tartare. Then you'll learn how to prepare the creamiest seafood risotto and juiciest seafood pasta you have ever tasted. In the meantime, if the weather allows, the wood-fired barbecue will be ready for the fish. In case of bad weather, don't worry, the oven and a good heavy-bottom grill pan can do miracles. And for your sweet tooth, we’ll bake one traditional Istrian dessert paired with dark chocolate mousse. With your meal you’ll have two bottles of Istrian wine, coffee, and a digestif. Since the class is in Pula, you'll need to drive there. If you'd prefer not to have to appoint a designated driver, transfers can be arranged instead.

Today you’ll be indulging in a truly unique culinary experience, a truffle hunting adventure near Lake Butoniga in central Istria. After being picked up and driven to the location, you’ll be greeted by your host with a welcome drink and truffle products like cheese with truffles, sausage with truffles and truffle spreads. With drinks and cold cuts, truffles and wine you’ll experience the original Istria, Terra Magica. After stories and wine tasting comes a little adventure. With your host and a truffle hunting dog you’ll hike into the hills, and with a little luck and persistence you will find a few truffles of your own. When you return to your host’s house you’ll have a traditional dish with fresh truffles and a glass of wine in the original Istrian ambience.

Day 8 - Traveling to Split by Private Car

The city of Split awaits you today. We suggest an early morning departure so you can take advantage of a special stop along the way. Your private van will pick you up at your accommodation for the beautiful drive. Be sure to keep your eyes open while driving along the coast of Kvarner Bay. To make the most of this journey, you'll take a slight detour to visit one of Croatia's signature spots, Plitvice Lakes National Park. Entrance fees to the national park must be booked online at least two days in advance. For small fee, we can include a stop at Bibich Winery, made famous by Anthony Bourdain.

In fact several of the accommodation options we offer in Split are nestled inside its ancient walls. These days there is an embankment in front of Diocletian's palace but the water used to go right up to the main wall. It's on this man-made strip of land that you'll find the Riva, a pedestrian promenade bustling with life. Split's UNESCO listed Old Town is contained within these old walls and is a pedestrian-only maze that it is quite easy, but fun, to get lost in. Who know what romantic hidden cafés you might find in one of the narrow streets and alleyways? To get the best out of your time in Split, however, we recommend taking a tour with a local guide. Split is very well connected for flights, with an international airport a half hour drive away and is a popular stopping point for our guests on their way between Dubrovnik and the islands of Hvar, Vis, or Korcula, all easily reached by a ferry from Split's port. If you base yourself in Split for a few days, you will find it is also perfect located for visits to some of Croatia's most stunning national parks.

Be sure to ask about the daily specials! We also recommend visiting Split's famous fish and greengroceries markets, a central part of local life. We recommend visiting in early morning, when the seafood is at its freshest, and there are the most options. This is when many locals buy food for lunch.

You’ll be picked up at your accommodation and led through the UNESCO-listed 1,700-year-old Diocletian’s palace, which is just the beginning of the tour. You’ll also see the Cathedral of Saint Duje, one of the most beautiful cultural wonders on the Adriatic coast. And you’ll explore the ancient cellars as well as the square in the center of the palace. The stunning Roman temples will awaken the spirit of another time for you, as will the famous Golden Gate and the big statue of Grgur Ninski. Today you’ll be exploring the famed city of Marco Polo on foot, with help from an expert local guide. Korcula is one of the most beautiful and best-preserved cities in the Mediterranean, with impressive stonework from local artisans. On your 1-hour tour through the Old Town, you’ll get insight into Korcula’s long and rich history, from Greek and Roman times through the Venetian period and up to the present. You’ll explore all the best-loved sights including the Bishop’s Treasury and the Cathedral of St. Mark, and the guide can also provide you tips for must-see sights. Because Korcula is also a city rich in art, along the way you’ll enjoy the works of Marko Andrijic, Ivan Mestrovic, Tiziano, Carpaccio, Bassano and Tintoretto. Korcula has become a must-see on the Croatian gastronomy map. From “konobas” (local taverns) to fine dining, one thing is for sure - ingredients have to be local, seasonal and fresh. While walking around the Old Town you can spot the LD Terrace, De Canavellis, and Filippi. These are Korcula's trio of fine dining. Or you maybe fancy some seafood? Some dare to say Nonno has the best fish in the town! A place for a light lunch where locals like to go? Aterina for sure. But let's not forget that there are amazing konobas inland, which even Bill Gates is fond of. Be sure to check out Konoba Mate or Konoba Maha, which make traditional local cuisine at its best, with amazing peka or Zrnovski Makaruli, accompanied with great local wines. One thing you need to remember is that you need to be hungry before dining out, as the portions here are very generous! Don't forget to book your table!

Day 12

Day 12 - Traveling to Dubrovnik by Private Car

Choose your morning Korcula departure time, and a driver will pick you up at your accommodation and bring you straight to Dubrovnik. You will first take a short ride on a ferry to get across to the mainland and then will continue by car to Dubrovnik. We will also arrange for a stop on the Peljesac peninsula along the way for tasting some of Croatia's best wines and a boat ride combined with oyster tasting. You'll have captivating Croatian coast views practically door-to-door.

A walking tour of Old Town will take you to its elegant main street and most of its most important sights: The Franciscan Monastery, Onofrio’s Fountains, Sponza Palace, Orlando’s Column, the City Bell Tower, the Church of St. Blaise, the city’s patron saint, and Rector’s Palace, the seat of the Republic and the Cathedral. This is the perfect orientational tour of the Old town and will give you the best insight into the rich history of Dubrovnik. You’ll learn what there is to see and do in Dubrovnik and how to get around.

Eat Like a Local

Dubrovnik's got some good (and some unfortunately not-so-good) restaurants but the best meal you can possibly have in town isn't at a restaurant. It's to be had at a local's home, sitting down with a family and a select few other visitors. We'll secure you a spot for a Dalmatian dinner experience without equal, that has been written about in the pages of the Wall Street Journal and National Geographic. You'll enjoy a multi-course dinner with wine, where the main event is a spectacular peka dinner - a traditional style of cooking usually translated as 'under the bell'. This is a truly unique experience that will make your vacation extraordinary. You'll be picked up in Dubrovnik by your private driver and driven into the Konavle countryside to a gorgeous 500-year-old farmhouse for a half-day cooking class that will not only teach you some local specialties but also about Dubrovnik and Croatian culture and history. You'll start off in the family garden picking fresh seasonal vegetables that you will prepare alongside local ingredients such as fresh fish or meat.
