Day 4

Day 4 - Traveling to Lyon by Train

It's time to say au revoir to Paris today and head to yet another fascinating French city, Lyon. We will arrange your transfer to the train station and provide you with second-class train tickets. If you wish to upgrade to first-class tickets, you can do so for an additional fee. There are several trains from Paris to Lyon daily, and you can choose your preferred departure time. Once on the train, sit back, relax, and enjoy the 2-hour train ride to Lyon.

The third-largest city and second-largest urban area in France, Lyon is situated at the confluence of the rivers Rhône and Saône. Traveling to Lyon feels like entering a triple-faced city. One has grown along the banks of the Saône and onto the Presqu'île (peninsula) since the time of the Roman Empire, leading to the creation of the largest Renaissance district in France. The second one goes beyond the Rhône to the East and dates from the eighteenth century onwards. The third one, to the South, coincides with modern Lyon's beating heart in the contemporary Confluence district.

This Beaujolais tour starts with a morning visit to Blacé, where a local wine producer will guide you through their vineyards. Conclude the day with a scenic drive through the southern golden stone region to Oingt, a medieval gem, before returning to Lyon.

Day 7 - Traveling to Bologna by Airplane

Today, you're headed from France's gastronomic capital to Italian gastronomic powerhouse Bologna. To get from Lyon to Bologna, the best option is to take a direct flight with Air France, which on this route is operated by Twin Jet, using a 19 seater turbo-prop, for some 'almost private flight' ambiance. Cheaper non-direct flights are available. On your day of departure, a driver will pick you up at your accommodations and take you to the airport for your flight.

The city's history stretches back a few hundred years before Christ and it is home to the oldest university in Europe. These facts are responsible for two of the nicknames Bologna owns with pride. La Dotta – 'the learned one' and La Grassa – 'the fat one'. Truly you're never far from a spectacular meal in Bologna, as long as you're not vegan. Emilia Romagna might not be a name that's as well known as neighboring Tuscany but its food specialties are renowned the world over. The king of Italian cheeses: Parmigiano Reggiano, Prosciutto di Parma and traditional Aceto Balsamico are all from around here and a visit to see how they're produced is a must. Petrolheads will also find much to love in Emilia Romagna. Ferrari, Lamborghini, Ducati and Maserati are all produced close by and have museums or factory tours available. If 'slow food' and fast cars aren't your thing then Bologna still doesn't disappoint. A thriving arts scene means you'll easily find a more cultured diversion, from art galleries to operas. And if you want to work up an appetite, the gently leaning Asinelli Tower's almost 500 steps will help you burn some calories. From the top you'll see why Bologna has another nickname 'La Rossa' – the red one, as you gaze out over the red tiled roofs of the old city, which escaped WWII largely undamaged by Allied bombing raids.

The tour will start in the morning, when we will pick you up to visit a Parmigiano Reggiano dairy. This cheese is exclusively produced in the central part of Emilia. Since the production process begin every morning with fresh milk, the tour will start quite early. You will have the chance to watch every step, starting with the milk and ending up to the final aged wheel. In the end, a tasting will show you the differences and the evolution of the flavour depending on when they were produced. Later on, you will reach a Traditional Balsamic Vinegar in Modena. The production of this traditional aromatic vinegar only takes place in this specific area of Emilia and it requires at least 12 years of ageing. You will visit an ageing room and have a vinegar tasting, followed by tasting of local products. In the afternoon, you will go to the town of Parma, where you will taste the renowned Prosciutto di Parma which is made only in few nearby hillside towns. There you will learn the preparation and aging process that creates one of the best cured hams in the world.

Day 10 - Traveling to Rome by Train

We hope you've had your fill of Emilia-Romagna's specialties because today you're headed to the magnificent Italian capital. We will provide standard class tickets on a direct high-speed train to Roma Termini station. The journey takes about 2 hours. First-class tickets are available for an additional fee, but we find the standard class on the high-speed trains is perfectly comfortable. We will also arrange for a driver to pick you up from your accommodations in Bologna and take you to the train station.

Learn how to make authentic Roman-style pasta, fried seasonal specialties, and Grandma’s dessert from scratch in a cozy restaurant in the Jewish section of Rome's center. You'll meet your host at Piazza Mattei, in the heart of the former Jewish ghetto, then head to the restaurant where the chef awaits you to reveal secrets and recipes. This is a hands-on class, but if you'd prefer to be a spectator, you can relax while watching the chef work, all while enjoying your own glass of wine. You'll learn how to make homemade pasta from scratch, clean and prepare seasonal vegetables for frying, and create a simple and tasty dessert that all Roman grandmas used to cook for local kids. As you do so, you'll also learn about the history and legends of the Jewish quarter and its unique foods. Just please keep in mind that the restaurant can accommodate vegetarian/gluten-free diets but not kosher.
