This sample 15 day (14 night) itinerary covers much of Georgia, from its charming capital, to remote mountainous Mestia, and friendly Batumi. Along the way, this sample includes nights in Signaghhi and Kutaisi, which are great bases for exploring the surrounding countryside, and allow for opportunities to stop at memorable places along the way. There are even Turkish baths that harness the sulfurous waters that flow from hot springs and down a waterfall. Newfound prosperity has brought stunning new hotels, showy new parks, cable cars, and a monumental cathedral, but the Old Town’s charms remain untouched, save for the occasional paint touch up. The oldest district, which lies beneath a massive fortress, has its own unique form of architecture, with colorful wooden homes featuring large, carved balconies.

For your first night, we recommend taking a funicular up to, yes, Funicular Restaurant. There you can enjoy one of the city's best panoramic views. This excellent restaurant is located in a Soviet building that has been recently renovated, at the entrance to the Mtatsminda Amusement Park (which you can stroll around for free). The funicular itself dates back more than 100 years, but has fortunately likewise been renovated. Grab “Lagidze Waters” (a popular natural lemonade), and a "ponchik" filled donut, and take in the city from above.

A cable car connects Rike Park on the left bank of the Mtkvari river with Narikala Fortress. Here you'll have fantastic 360-degree views of the city from the large windows of the car, plus an easy ride to the top of the hill. The ride only takes a couple of minutes. When you get out at the hill-top station turn right to the huge aluminium Kartlis Deda (Mother of Georgia) statue, or left to the Narikala Fortress.

The ancient Abanotubani District sits below the imposing fortress; the brick, domed rooftops of the baths bubble up like spring water. This is the most historic part of the city, as according to legend, it was the sulfur springs that enticed King Vakhtang Georgasali to settle the land and declare it the new capital city in the 5th century AD. There were once more than 60 bathhouses in Tbilisi where people could get squeaky clean or stay for a soak, letting the curative sulfur water ease their ailments. Fast-forward to today: there are five surviving bathhouses in Abanotubani where locals and travelers can experience a sulfur bath.

It's located in Sighnaghi, the "Town of Love,” and produces artisanal wines aged in Qvevri, according to ancient Georgian traditions. Pheasant’s tears was founded in 2007 by John Wurdeman, an American painter that moved to the Georgian town of Sighnaghi to follow his two passions — wine and art — and Georgian winemaker and farmer Gela Patalishvili. The name "Pheasant’s Tears" is connected to a Georgian tale in which only the very best wines are good enough to make a pheasant cry for joy.

The Soviet Occupation

Delve into the Soviet occupation of Georgia by visiting the Museum of Soviet Occupation, based on similar institutions in Tallinn and Riga. There, a permanent exhibition details Soviet rule in Georgia, from 1921-1991, as well as the efforts of resistance movements, and the many victims of Soviet repression. Here, you can find secret police files on public figures seen as subversive and often shot or deported, and other artifacts demonstrating Soviet repression.

Be prepared for a full day, as Europe's highest village is more than a little remote. A three-hour drive by jeep will take you through several villages, where you can visit churches with ancient murals and frescoes, showing the timeless art and lifestyle the region is known for. Indeed, the sense of living in another time, mixed with sheer natural grandeur, makes the drive more than worthwhile. Naturally you'll see the village's famed Tower of Love, the setting of a classic love story. Within Ushguli, you'll visit the village of Chazhashi, with its tower houses and medieval fortifications, including a castle believed to have been used as a summer residence by Queen Tamar, the 12th century namesake of seemingly half of Georgia's women. You'll visit the home and gallery of cherished painter Fridon Nizharadze, whose surreal psychedelic works have attracted international attention. Above the sprawling city, Argo Cable Car offers wide-open views of the rooftops, the sea, and the lush hills that surround the area. At 250 m (820 ft) above sea level, this sightseeing center provides visitors with unmatched views. Hop into a blue enclosed gondola with panoramic glass walls and head for a dramatic 2,586 m (8,484 ft) downhill ride. Snap photos of the mountains meeting the sea, featuring modern buildings and quaint neighborhoods in between. You can also grab a drink at the center before heading down.
